Corvina and Rondinella are harvested in mid-September and after a careful selection of the grapes are left to dry for about 120 days in the fruit; then it follows a slow fermentation that lasts for 50 days and aged for about six years in oak casks, with a subsequent stabilization in the bottle for another 12 months.
