The Amarone della Valpolicella Classico Cesari is a red wine capable of reflecting the characteristic breadth, structure, and softness of this famous Venetian denomination. It is said that the birth of Amarone happened by chance in the first half of the 20th century when a barrel of Recioto from the Negrar social winery was forgotten in the cellar and resumed fermenting, exhausting all residual sugars and thus becoming dry. The cellar master Adelino Lucchese found the barrel and after tasting it exclaimed: “this wine is not bitter, it is amaron!”, thus coining the name of one of the most important red wines in all of Italy.
Cesari Amarone della Valpolicella Classico comes from a blend of Corvina Veronese grapes (75%) and Rondinella (20%), with a small addition of 5% Negrara and Rossignola. The vines are cultivated on morainic-alluvial soils within the municipalities of Negrar, Marano di Valpolicella, Sant’Ambrogio di Valpolicella, Fumane, and San Pietro in Cariano, in the classic area of Valpolicella. The bunches are placed in drying in the fruit room until December, the month in which the pressing and alcoholic fermentation of the must takes place in contact with the skins. Subsequently, the wine is aged for 12 months partly in large Slavonian oak barrels and partly in barrique and tonneau of French oak. After further resting in the bottle, the Amarone is finally ready to be marketed.
The Amarone della Valpolicella Classico by Cesari is ruby red with purple reflections. On the nose, intense aromas of dried plum, cherry, and fruit preserves are perceived, combined with notes of tobacco, toasted hints, and references to spices like clove and black pepper. Full, enveloping, and warm the taste, yet balanced thanks to the lively freshness and well-integrated tannins.
