Der 'Aedes' von I Custodi delle Vigne dell'Etna ist ein Etna Bianco, der in den kühleren Zonen des Vulkans produziert wird, wo das Klima ideal für die Produktion von Carricante ist, der Hauptsorte dieses Etikettes. Frisch, voll und mit anhaltender Mineralität, vinifiziert und reift 'Aedes' vollständig in Edelstahl und offenbart im Geschmack florale Aromen von Ginster und fruchtige Noten von Zitrusfrüchten. Empfehlenswert zu leichten Fischvorspeisen oder vegetarischen Hauptgerichten.

The Etna Bianco 'Aedes' from the winery I Custodi delle Vigne dell'Etna is a wine expression of the largest volcano in Europe with a vibrant mineral essence, resulting from a blend of traditional varieties from the territory. These come from two different areas of Etna, namely: Contrada Moganazzi and Contrada Mertoli. The first is located in Castiglione di Sicilia, on the northern slope, while the second is found in Mascali, on the eastern slope. The name 'Aedes' derives from Latin and means "house", "family", chosen because with this wine the estate intends to convey a welcoming sense of familiarity.

'Aedes' Etna Bianco I Custodi delle Vigne dell'Etna consists of a blend of Carricante grapes (60%), Grecanico (15%), Catarratto (15%) and Minnella (10%), varieties grown without the use of pesticides and other synthetic chemicals mainly using the alberello system. The vines, approximately 10 years old, are rooted in sandy soils of volcanic origin, rich in mineral elements and with a subacid reaction, located at an altitude of 650 meters above sea level.volcanic, rich in mineral elements and with a subacid reaction, located at an altitude of 650 meters above sea level. After manual harvesting, carried out in the second half of September with careful selection of the bunches, they are pressed whole in a gentle manner. The must obtained then undergoes spontaneous alcoholic fermentation in stainless steel tanks at a controlled temperature of about 20 °C. This is followed by aging for about 6 months also in steel.

The Etna Bianco I Custodi delle Vigne dell'Etna ‘Aedes’ has a bright straw yellow color with golden highlights. The aromatic bouquet expresses fascinating hints of apple, broom, orange peel, and almond, surrounded by a beautiful mineral vein. Dry, full-bodied, and dynamic on the palate, endowed with remarkable freshness and a long savory-mineral finish.
