Vin Santo del Chianti from the I Veroni winery is a label of the great Tuscan tradition. It still represents the wine that symbolizes the history and oldest customs of the area. It is produced following the ancient savoir-faire of the past, with an approach that is still artisanal and familiar. It is made from dried grapes and aged in small wooden casks for many years. The end result is a complex wine that is intense, rich and seductive, ideal for enjoying at the end of a dinner party.
iL Vin Santo is produced in the beautiful hilly area of Rùfina, in the heart of the Chianti Classico region. The I Veroni estate covers an area of 70 hectares, 20 of which are planted with vines, with a density of 5,000 vines per hectare and managed under organic farming. The vineyards are located between 100 and 350 meters above sea level, near the ancient Pieve di San Martino in Quona. Most of the vineyards are planted with Sangiovese or international red grapes, except for a small part dedicated to white grapes for the production of Vin Santo. The Sangiovese, Canaiolo, and Tuscan Malvasia grapes used to produce Vin Santo come from a small vineyard located in the Fornace location with southern, southwestern exposure. Harvesting takes place in October, and the best bunches are dried until January. After pressing, fermentation with indigenous yeasts occurs in 100-litre oak and chestnut barrels. The wine matures for 8 years in the kegs and is aged for 14 months in bottles before release for sale.
Vin Santo del Chianti represents the memory of the Chianti region and the oldest Tuscan family traditions. It is coloured in the glass with an amber, intense and lustrous guise. The aromas are reminiscent of the sweetness of chestnut honey, caramel, aromas of dried fruit, resin and walnut husk. The sip is persuasive and enveloping, warm and deep, broad and rich, with a very persistent finish.
