Located in the Barsac area, renowned for the exceptional quality of its sweet botrytized wines, Château du Mayne La Merci specializes in a small yet exquisite production of Sauternes. Until 2016, the winery was known as Château du Mayne, but it was renamed Château du Mayne La Merci by the new owners of the estate, with its new chapter officially beginning the following year. The château, dating back to the 18th century, is surrounded by a centuries-old park rich in plant and animal species, in a setting of thriving biodiversity. Today, the tradition of the winery is carried on by Gilles and Brigitte Bourjade, together with their daughter Caroline.

Château du Mayne La Merci spans 7 hectares of vineyards dedicated to the traditional varieties of the region: Muscadelle, Sauvignon Blanc, and, above all, Sémillon. These vines thrive on siliceous-gravelly soils that contribute to the mineral freshness characteristic of Château du Mayne La Merci wines. For many years, the winery has embraced organic farming, respecting the rhythms of the plants and the health of the environment. In this approach, the use of pesticides and synthetic chemicals is prohibited, with only copper and sulfur used to protect against pathogens. The geographical location of the estate, just 800 meters from the cold waters of the Ciron River and the warmer waters of the Garonne, forms the basis for its unique microclimate, characterized by morning mists alternating with clear skies. This creates the ideal conditions for the development of noble rot, caused by the Botrytis cinerea fungus, which progressively dehydrates the grape clusters, concentrating their sugars and aromas. Harvesting is done in small batches over multiple passes, selectively picking grapes affected by noble rot. Equally critical is the fermentation and aging process, lasting 18–24 months in French oak barrels, which adds further complexity to the wine.
