Der Arbois-Pupillin „Foudre à Canon“ ist ein Weißwein aus dem Jura, der als ‚natur‘ definiert wird, da er ausschließlich aus Savagnin besteht und ‚ouillé‘ ist, da er 20 Monate auf der Feinhefe in großen, vollständig gefüllten Eichenfässern ohne Oxidation gereift ist. Er hat ein fruchtiges und zitrisches Aromaprofil, das sich durch Energie, Frische und eine fesselnde, fast salzige Salzigkeit auszeichnet.

The Foudre à Canon is a complex and kaleidoscopic wine, enriched by a very subtle and integrated oxidation that enhances its taste-aromatic profile. In the heart of Jura, a wine-growing region with enormous potential, Julien Mareschal cultivates 5 hectares divided among Chardonnay, Pinot Noir, Savagnin, Ploussard, and Trousseau with an approach aimed at minimal intervention. An innate sensitivity developed as an oenologist in numerous other wineries, all experiences that allowed Julien to establish his small Domaine, which now produces bottles of the highest quality.

The Arbois "Foudre à Canon" comes from pure Savagnin grapes grown on marl-schist soils, located at about 400 meters above sea level. The method used for production is called ouillé, in which the liquid is aged in barrels while constantly topping up the contents. This way, the oxidation to which the wine is subjected is gentle and almost imperceptible, yet still enhances its complexity. The wine ferments in wooden barrels of about 1500 liters, the the same in which it ages for about 20 months on the lees before bottling.

The white "Foudre à Canon" presents itself in its golden and enchanting guise. The nose unfolds in a whirlwind of broad and varied aromas, ranging from wildflowers to hazelnut, from citrus zest to vanilla. The sip, despite the olfactory richness, is however tense and reactive, driven by a refined burst of freshness and salt that significantly extends its taste dynamics. The persistence is very long, fading into notes of dried fruit and menthol, refreshing the sip and calling for another sip. An ecstatic pairing with regional cheeses like Comte, or with creamy fish-based first courses, such as risottos or pasta cooked like risotto.
