Das Chardonnay "Odem" ist ein israelischer Wein aus den Höhenlagen des Golan, auf fast 1200 m Höhe. Die Fermentation und Reifung in französischen Barriques verleihen ihm Weichheit und aromatische Komplexität, mit ausgeprägten Noten von exotischen Früchten, Vanille und süßen Gewürzen. The Chardonnay “Odem” Yarden from Golan Heights Winery is an Israeli wine, originating from the historic Galilee. The first vineyard of the winery was planted in 1976 and the first productions started being marketed in 1983. The winery is considered one of the most specialized in the production of kosher wines, suitable for consumption by those who practice the Jewish religion and wish to adhere to certain precepts regarding it contained in the Torah. Four production lines are carried out: Yarden, Gamla, Golan, and Hermon, all marked on the label by the ancient Israeli symbol of the oil lamp. The word “Yarden” is the Hebrew translation of the sacred Jordan River and was the first to be produced.

The pure Chardonnay grapes of the Chardonnay “Odem” Yarden from Golan Heights Winery grow in the “Odem” vineyard at 1150 meters above sea level, one of the highest overlooking the beautiful Mount Hermon, covered in snow for a good part of the year. The peculiarity is that the principles of organic farming are followed for cultivation.of organic farming. The first plants date back to 1989, while in the 2000s international varieties were added, including Chardonnay. During winter, the climate is rainy and particularly cold with abundant snowfall; in summer it is mild with nighttime temperature swings for good grape ripening. The grape harvest is done manually; in the winery, the must ferments in wood according to kosher rules. It ages for 7 months in barrique.

Visually, the Chardonnay “Odem” Yarden from Golan Heights Winery presents a straw yellow color with brilliant reflections. The bouquet of aromas recalls yellow-fleshed fruits such as apple, pear, and pineapple with buttery notes and sweet spices like vanilla; on the palate it is full, enveloping, and powerful with a good final persistence that invites sip after sip. It is recommended to pair with steamed fish dishes, shellfish, and mollusks; interesting also with light first courses.
